We love tortillas around here. We use them for fajitas, sweet potato bean burritos, hummus wraps, enchiladas… Today I was making homemade tortillas in bulk in order to freeze several. I was also making sweet potato bean burritos to both freeze and have for lunch. Yum!

Did you know that it is easy to learn how to make tortillas at home? Today, I want to show you in pictures, how to do it. This is a simple recipe for homemade flour tortillas that you and your family will love.

Lets get started:

You’ll need two cups of flour from hard white wheat.

1/2 tsp of salt

1 tablespoon of butter

and enough water over the melted butter to make 3/4c (I tripled the recipe here!).

Now, add your water and butter mixture to the flour. Stir well.

After you have stirred to mix the dough, knead it for two minutes.

Your dough should be in a nice round ball once you’re done kneading!

Cover the dough with a damp cloth.

Set a timer for 20 minutes and let the dough rest.

Now, go fold some laundry!

Separate the dough into pieces. I usually make 8-10 tortillas with this recipe.

Roll out your tortilla and cook it for 30s on each side. They won’t look perfect, but they’ll eat just fine!

Enjoy the finished product!

Do you want to know the secret? There are two: feta cheese and homemade Italian dressing. Yep, on this white pizza recipe, feta is what adds a burst of flavor. Even if someone in your family doesn’t ordinarily like feta, they might on this white pizza recipe. It’s super easy to prepare, and I have found it to be a great “company” meal.

This pizza bianco recipe is a result of me playing around with a few recipes to create this yummy feta-licious pizza and we have all been happy with the results!

Ingredients:

Homemade pizza dough (the easy whole wheat bread recipe I use)

Homemade Italian Dressing (the recipe for Italian salad dressing mix I use)

1 green pepper, diced

1 red pepper, diced

2 green onions (scallions), diced

16 oz. organic mozzarella cheese (If you can find raw mozzarella, this is ideal!)

½ c feta cheese

Handful of raw spinach leaves, optional

1 small tomato, diced, optional

cooked bacon, optional (this makes it extra tasty!!)

Directions:

Preheat oven to 425.

Sprinkle a pizza stone or pan with cornmeal or flour. Roll out pizza dough.

Top dough with as much or as little Italian dressing as you prefer. I use about 2-4 tablespoons.

Layer pizza with half of the mozzarella cheese, peppers and onions, and then remaining mozzarella cheese.

Sprinkle feta on top and add spinach and tomatoes if desired.

Bake in oven for 10-15 minutes or until cheese is golden brown and bubbly.

My family devours this pizza, and I have never had anyone who has tried it say they didn’t like it! I have not found any other pizza recipes that even compare to this one.

If you try this pizza bianco recipe, please let me know how you like it and how it stacks up against other white pizza recipes you may have tried in the past!

AND, it’s quick and easy to prepare.

Plain old scrambled eggs get boring so I love using this particular recipe. It is now my husband’s absolute favorite way to eat eggs. They have a savory flavor that goes wonderfully with fresh bread or muffins. I have used this scrambled eggs recipe multiple times for guests and it is always a hit.

We eat a lot of eggs in our house! Not only are they a great source of protein, but eggs are power-packed with many other vital nutrients. You really can’t go wrong with adding eggs into your diet and they are great for breakfast, lunch, or dinner.

I have modified this recipe from Sue Gregg’s Recipes cookbook. I like this lady! J

Scrambled Eggs, Perfected!

4 eggs

¼ c plain, whole milk yogurt

¼ c parmesan cheese

¾ tsp salt

¾ tsp thyme

¼ tsp dried mustard

½ of a red pepper, diced

½ of a green pepper, diced

1tomato, diced

1 green onion, diced

Any other veggies you want to add!

Directions:

1. Put all of the ingredients into a mixing bowl and whisk until well blended.

2. Melt about a tablespoon of butter in a large pan and then add your egg mixture.

3. Let the eggs cook for a few minutes before you start “scrambling” them with your spoon or spatula.

4. “Scramble” your eggs with a spoon or spatula until they are the consistency you prefer.

5. Serve and enjoy! We love these with some sort of bread and fruit. Yum!

The only note I’d make is that the more veggies you add, the more herbs you should also add to really be able to enjoy the flavor they give to the scrambled eggs.
